How do I figure out what to set this to in order to ensure that all my files get indexed?

If you have 300 pages on your web site, then set it too 300 (or just over).
Normally is you have developed a web site, you have some rough idea about how many pages & documents you have. You should at least be able to have a guess if you have 10, 100, 1000, 10,000 or 100,000 pages, which should be close enough.
Better to be 1000 over than 10 under. So round up.
